No time…

I don’t really have time right at this minute to update properly and add the promised recipes, but I will do, I’ve made a chocolate orange marble cake that I’ve taken pictures of at each step to give a proper guide on how to put it all together,, however I don’t have the video I mentioned earlier, as when I came to filming the cooking of the fish the camera was out of battery; bloody typical. I will include the recipes anyway, and a nice chilli/tomato thing for putting on white fish when cooking it on the BBQ/Grill.

Regards Richard

Keep reading and tell your friends, I want to build up a good audience while I have the time, anything you want to know, from guitar to cooking I’ll be happy to help, and any tips or information you could give me would be equally welcomed, I don’t profess to no everything about cooking, or indeed very much; I love to learn from those who are more experienced.

Arrivé

Why not to fly Ryanair?: We decided for some reason to drive to Bournemouth airport to get the plane to carcassone, this meant that we would not have to drive very far to reach Ventenac once we arrived in France. This also unfortunately meant we had to fly with Ryanair. As the traffic was dreadful we arrived at the airport just in the nick of time. Or so we thought, the signposts for web check in sent us in the wrong direction, as we were then redirected from whence we came. As we finally arrived at the bag drop off desk, a rather ignorant assistant (dressed in the usual ridiculous attire complemented by Essex blonde hair) stepped in front of us and announced to myself and my father that the desk had just closed this minute, (we had watched the clock change from 15:05 to 15:06), we proceeded to argue, and indeed a man in front of us was still handing his bags over. In the end we gave in (in true french spirit) and thought we better queue up for the gate to ensure we actually made the flight. We were told to take our suitcases with us to the plane and we would be charged an extra 60 pounds. We were then stripped of all liquids, and then had to carry our bags to the plane. In effect, we were charged 60 pounds to give away some free toiletries, and have the pleasure of putting our bags on the plane. Absolute nonsense. The woman who had started the problem, was present throughout, and was continually abrupt and rude. :( For general information purposes the flight was average, and they did not charge us to use the toilet, however if they did I would have used the aisle.

We finally arrived at about 8pm after driving around Ventenac for about an hour. The next day we went for a walk by the river and had a picnic, the pictures below will show all of that. Today we went to a big indoor market in narbonne, where we picked up quite a few kgs of fish which I’ll cook tonight and share the recipes, and perhaps even video it. :)

Thai green Curry

Ingredients required:

  1. King/tiger Prawns (can be substituted with chicken, I just like prawns)
  2. Asparagus
  3. Sugar snap peas
  4. Coconut milk
  5. sesame oil
  6. 3 birds eye chillies.. remove the seeds if you want to reduce the heat.

For the paste

  1. Piece of ginger, about an inch in length.
  2. 4 Cloves of Garlic
  3. 1 Tablespoon of Cumin
  4. Dark soy sauce.
  5. Basil (teaspoon)
  6. Two fists full of fresh coriander
  7. Lemongrass

Instructions:

  1. As usual grab a drink.
  2. Chop up all the paste ingredients and put them in a blender.
  3. Pulse them so its blended up into a paste, you don’t want to completely liquefy it.
  4. cut the asparagus into finger length pieces and into halves.
  5. Cut the prawns down the back so when they are fried they will flay out.
  6. Put a deep frying pan, or a wok onto the hob. (a regular pan will do)
  7. turn the heat right up and let it heat up.
  8. just before it’s smoking shove the sesame oil in and let it heat quickly
  9. turn the heat down a bit.
  10. Place the prawns in the pan.
  11. Cook them till they go red :) , this should be pretty quick.
  12. Put the asparagus and sugar snap peas in now.
  13. Stir in your Green curry paste for about 30-50 seconds.
  14. Add your coconut milk and stir in so any lumps dissapear.
  15. Allow to cook for a couple of minutes on a low heat.
  16. Serve with Jasmine rice and garnish with your sliced chillies.
  17. Enjoy :)

Back again

I’ve just got some time off from my summer job and so have actually had a chance to post. I’ve been working at the hospital as the store man, the pay was alright, and the extra cash should tide me over when I’m strapped for cash at university. I’m going to the south of France at the end of the week, so expect many pictures, and any useful tips regarding cooking that I pick up on they way. As I’m here I think I’ll post a recipe for a green curry to keep the blog going :) . If anyone reading this has any idea how to use adwords or anything like that I’d greatly appreciate as I am a slight wordpress noob.
